You fight Eleonore a few times during the story, at least once in a duel where you only have velvet.
If it's not that, then I'm sorry ut I have no idea, but I'd like to know too.
One of the better ways might be to equip as weak of a gear as possible, put the difficulty down to simple, and go to an area as late as possible with "big" enemies (dragon and golems usually are good for that).
Set your team to be defensive, and you should have enemies that still have a decent-ish HP pool to take a few hits.
If you didn't kill him yet, Titan (code red in the volcano dungeon) is barely anything more than a golem with more HP and better defensive stats, so he could be a decent sand bag.
In normal and above, I think he even negates the elements he is resistant towards, and with his fairly slow move set he shouldn't pose too much of a threat.
