But honestly, I don't know what exactly your problem with the boss is. McCullum wasn't hard, I avoid the lights, and just dodge in, hit, dodge out (because he gets super armor and doesn't stun like most things, so combos don't work).
The final boss wasn't much harder. Dash in, hit her, dash away when she's doing the AoE stuff.
I did a perfect run of the game (no NPC's dead, got best ending, etc) without ever even coming close to dying at any point in the game. Hell, most times I never even got hit by anything.
If you're as good as you say you are at Dark Souls, then this game should be stupidly easy for you. If you're honestly having trouble with fights, then either you're lying about your skill, trolling, or your game is being buggy as hell. Because you should NOT be having any difficulty, especially at the level you're at in the game (the higher your level, the easier everything gets).
But they're not as insanely hard as the hype makes them out to be. What they are is punishing.
The combat is straight forward. You have health and stamina and magic. You have different weapons and armor (so you can go for slow strong hits or fast weak ones, you can go for heavy armor to not stagger and take less damage or be lightly armored and zippy). And it's all about learning the enemies. You study them, figure out their attack patterns, and most importantly, learn your own. Once you have the timing down, the game's really not all that hard. It can just be time consuming based on how you've built your stats (some fights can be a slog because you do so little damage, or you might one or two shot things).
The main thing with the Souls games is that when you screw up (which is generally how you'll actually end up dying), then you lose all the souls you've gathered (which are both XP and money) and respawn at the last bonfire you used. And you need to make your way back to your corpse to get your souls back. Of course it's also now respawned all the enemies as well. So if you're having trouble with something, that can be problematic. At the same time, it's just all the more practice (plus you get the souls from all the respawned kills, and any items they might drop).
Honestly I think the people who claim the Souls games are "insanely hard" are just the people who are used to the typical hack-n-slash games, where you can charge in swinging, maybe take a hit or two without caring and end up clearing a room. The Souls games don't work like that. You need to careful come in, swing at the right time, dodge when needed, and then you'll clear the room. If you button mash, you're dead. And that's generally more effort than a lot of players are used to. :p
As for levels, I know that at low level it can be hard, as you don't have as many options and your health/blood/stamina pools will be quite low relative to enemies (though if you can avoid being hit it shouldn't matter).
But you can always bite or use a bleeding weapon for quick blood (which means infinite healing). And a high stun weapon can also work wonders against most enemies.
