Enemies have 2 bars. The top - RED is their life. The small white bar that appears VERTICALLY on it after you give them a specific type of dmg (aka vampire) skills, means they will not heal back up past that white bar. The large gray-white bar under the health bar is not stamina, but "defense" in a way. These bars show you how much more alt-fire attackyou need to do in order to STUN the target so you can embrace them and drink their blood. In other words, if you are using a club or a stake, when you right click you stun them, so that when they have no more white bar they drop downa nd you can press F and drink their blood.
The little legend and colors are the types of damage the enemy is strong AGAINST. For example, if it is a double crossed swords, that means your enemy will resist a large chunk of PHYSICLA dmg (aka sword, club, claw attack). If it has a sniper crosshair, that means they wil resist ranged attack meaning pistols, shotguns, etc. If they have a head like icon with stripes they will resist SHADOW type attacks (your vampire skills). And if they have a blood drop it means they will reiest blood skills like your blood lance. / spear. So you always want to use the type of skills they ARE NOt resistant to in order to inflict the most damage.
On the same topic, a RED icon means they have a very high resistance to that type of attack, and orange icon means they have about 50% resist. You will still inflict good dmg, but not as good as you'd like.
