Why was everyone complaining cemetery boss fight being too hard without embrace?

First of all, no spoilers please thank you, so far just finished the boss fight. It's my first play and I'm doing no-embrace run, haven't bitten anyone, The Docks, Whitechapel and Pembroke Hospital are all sanitised. I'm just wondering why people on reddit (might as well here) were complaining the boss fight being too hard without embrace someone. During the fight I was level 15 and the boss was level 21. My build is autophagy (2), spring (2), shadow mist (upper branch 3), coagulation (2), abyss (1), hard biting (2), health & stamina (4), big thirst (2).

Weapon wise, the whole fight I only relied on my level 3 blood sucking hacksaw. I was surprised that I defeated her on first try (technically second, because the boss killed the priest and I thought I could have saved him so I suicide to fight again, then googled and realised there is no way to save him, it's just the plot). I would not say it was hard, just need to be more careful and tactical. Well... late game boss might be hard, but specifically this fight, it's not as tough as people complained. How is that?
