Janitor Facts-
The reason his name is roger is a reference to Roger Snow (one of the concept arts for the game). His concept art included the Janitor's design. https://cdna.artstation.com/p/assets/images/images/006/426/568/large/roger-snow-janitor.jpg?1498510209 So the Janitor's full name might be Roger Snow!
The Janitor's arms might be able to regenerate because of the painting of his severed arm.

Currently little nightmares is being developed into a television series with the help of henry selick, the director for nightmare before christmas already on the pilot!

Don't forget the fact that in-game, his nametag also says Roger!
