is there a mod to disable the ghost?
as fun as it it is to be punished for taking my time in this game where i'm punished for not taking my time i'd rather get rid of it

Not as far as I know but there is a mod that gives you a four-leaf clover at the start of each level, making the ghost appear at 5 minutes instead of 3.

Three minutes is a long-ass time when the levels are so small. If you're having that much trouble with the game, odds are you won't be able to do it even with infinite time.
... I don't think removing the ghost is a good idea. If there's no time limit, you have no reason to rush, leading into you trying to do way too much each level and/or being way too safe. You'd probably spend lots more time on most levels this way and be so much more frustrated if you die on a late level after spending 60+ minutes on a run. It's there for a reason

i really don't think a spelunky veteran would be complaining about an incredibly long time limit

i'm already frustrated after i die after the first level since that means i'm that much further away from getting to the part of the game i actually like (everything after world 1).
and i know the ghost exists for a reason (hence why i'm not saying it should be removed entirely) but personally i just don't enjoy it being there in any way. especially when i'm doing something like trying to get a dog and a weapon to the exit while looking around the level or get all the turkeys on a level to one spot to get all 3 with one bombs (or both, in some cases) or even just taking my time combing through the level to try find anything i can

There was a cheat table (cheat engine) that included a cheat a while back that got rid of the ghost outright for a while, but it's out of date and useless now.

The 3 minute timelimit is very long in my opinion, i always manage to complete the level with a spare 2 minutes or a spare minute to 30 seconds if i decide to take my time. You might just have to learn how to play the game faster if the ghost keeps coming up.

Having to manage the time you have and prioritize which things in the level you wanna do (health from pet, ton of gold from ghost pot, turkeys, mounts, Kali sacrifices, etc) is what makes the game interesting. Its kinda a core aspect of the game. Make or find a mod if ya feel like it but it won't be the spelunky experience anymore. In my opinion it could make the game tedious but its up to you whatever ya wanna do

time limit is a very fun intentional part of the game design and overall experience, IMO, forcing any player that wants to take full advantage of a level to measure their choices against the risk of dying to the ghost.

in general 3 minutes should be enough time for any level so as long as you arent trying to collect absolutely everything you should be fine, perhaps try looking up game tips or something, this is a quite difficult game after all. myself i can mostly plunder MOST of a level (sacs, money, etc) and have a chunk of time left, so maybe you need to simply get better

ofc its your copy and you can play and mod it how you want in the end i respect that, but consider it again maybe

looks like a couple new tables have been posted for the current version, so for now at least you should be able to disable the timer even if you can't stop the ghost from spawning if you hit a cursed jar.

There isn't too much of a reason to take that long on the levels IMO. The first couple stages aren't really much to write home about in terms of what you can do in them. If you just want to explore and find stuff out at your own pace that's cool though. I'm not sure if they have them or not but I'm sure someone would have thought to do it.
