That being said I'm sure there will be ghost removal mods so you can play the game however you want. I would check out Overlunky. It might have an option to remove the ghost.
In my opinion you would be better of playing a different game instead of turning Spelunky into something it isn't. Spelunky is about risk / reward, making quick decisions, and learning from your mistakes. There are a plethora of other games that will give you the freedom of exploration that your looking for. Im guessing you have played Terraria, but there are tons of games in that vain that will give you that style of play.

And yeah, ive played terraria.. It had the potential to be very good but it decided to be way too much like minecraft in the end.

While Spelunky did quite a few unique and new things (when it first released at least), the ghost was probably the main mechanic, if not one of the main ones, that drew attention. I'm surprised so many people want to get rid of it, you can just play another platformer if you don't like the gimmicks spelunky offers (this sounds more rude than I intend, but you know what I mean). Spelunky would be quite dull if it weren't for the spectre of death gently hurrying you along.
What initially drew me to the first game was playing the demo and figuring out that the game had tons of exploration, neat items to find and enemies to fight.
It also had a high amount of difficulty (which was appealing)
I also generally HATE platforming games. Its just that some aspects of the game were appealing enough for me to look past that and give it a try.
But i play games at a slow pace, wandering around looting everything and devising tactics and such and such. I just dont like rushing things.. There is no satisfaction i get from beating a game under a certain amount of time.
I actually like dragging things out to an absurd extent so i can sort of rp and have a nice fleshed out story for my character and his experiences in the game. I cant really do that if i just run around like im high on crack.
I guess i would call this game a very mixed bag. And i just hate the taste of one of the pieces of candy in there so much i just cant take another handful.

I think the game just isn't for you. Which is fine. I personally dislike Horizon Zero Dawn and most people love that game. I wouldn't call Horizon a mixed bag though, just not my cup of tea.
Spelunky 1 and 2 would completely break without the ghost, and its probably my favourite mechanic from the game. It adds so quick thinking to the game. The game would be brain dead easy without it.
Another thing to add is that you have enough time to search each level twice over once you get good at the game. Even then once the ghost does show up skilled players will continue to stay in the level and use the ghost to get gems and such.
Its not really a timer, is more of a difficulty increase as time goes on.
Some people have the ability to look at stuff objectively and some don't. For example I can say I don't enjoy a critically acclaimed game like God of War on Ps4. Because it has elements that don't enjoy in games. Not badly designed stuff, just stuff i don't like personally.
Then there's games like Bubsy 3D which are objectively bad. With terrible controls and camera. There's a huge difference between subjective and objective criticism.
Also I guess you are correct about the ghost. I just meant its not a timer for the level to end. Although beginners should probably just leave the level.
I think by mixed bag he didn't mean to say that it's mediocre (it's not) but that it has many aspects, some of which he hated and cannot reconcile.
I guess I can see disliking the ghost, but like I mentioned earlier, it'd take too much out of the game to consider allowing players to opt out, in my eyes. That, and I remember a FAQ list by the devs specifically mentioning they're not going to add it as an option. If you were waiting for it to get added, there's your answer.
Also were metacritic scores ever a serious metric for anything? lol
