There are only 2 points I know of where someone says "zombie" or "zombies"

Resident Evil Revelations "I found the target, but she's a zombie" -Jill
After finding Rachel Foley has turned. Despite that fact that she became an Ooze, not a zombie, Jill calls it a zombie anyway.

Resident Evil 6 "Zombie express huh?" -Leon
While exploring the subway.

Are there any other times where someone says "zombie" or "zombies" in the Resident Evil series?

Oh and leon doesnt say " huh " with that sentence in chp 1. Just fixing a small mistake...

Chris will say it when you meet wesker, which happens after you kill plant 42.

Yes, I mean RE6. During the part in the catacombs fighting Deborah I vividly remember him saying "I'll take care of any hostiles" Leon, you aren't sounding smart, just say zombies jeez.

The word "hostile" is used in 4, 5 and 6, it's supposed to be some kind of "professional" term to describe enemies in general.

Strictly speaking, she is right.
She calls it a zombie because it's a dead human but the body is still alive = zombie. The most "monsters" in re are zombies, besides of other things like controled enemies (plaga, molded...) or man-made subjects (hunter....). But only one type has the typical "hollywood-design" and the official name zombie.
[A ooze is just a T-Abyss virus infected human, like the zombies, just another virus and another effect on the body]

btt: i think you could find the most "zombie quotes" in the documents - or you could try part 1-3+CV (they still work), there are more "real" zombies, so the chance is higher for a quote.

Im pretty sure no one says Zombie in RE7 for obvious reasons.

But to add more to the list since i've just recently replayed RE2:

-Robert Kendo: I don't have a clue (darlin!). By the time I noticed something was wrong. The entire city was infested with zombies.

-Claire: [talk to Leon via radio] Leon, you there? We're leaving.
Leon Kennedy: Are you crazy? The streets are crawling with zombies!

-Ada Wong: When I saw the uniform I thought that you were another zombie.
