Is there a difference in ammount of ammo you find in the game between easy and normal difficulty ?

No, it is all about the difficulty adjustment. Easy starts at 160% player damage, normal at 100%. If you die enough in easy, it can be bumped up to 240%. Similarly to enemy damage, but I never testes the exact percentages since forcing the same attack from an enemy is difficult as hell.

I just finished the game in easy and had a ridiculous amount of ammo left by the end.

@Andeddu :

Yeah I also had too much ammo on easy. But now I'm replaying the game on normal and I'm noticing that it takes a lot more ammo to kill certain enemies. Like for example the bugs in the old house. The ones you have to kill with the flamethrower. They take a lot more ammo to kill on normal.

Well, on average, you need to dish out twice as much damage on normal than on easy, so it is hardly surprising. Madhouse has a roughly similar step up and more enemies.
