in the early days i usually dive for kelp for veggies until i am better off resource wise .
it all really depends on what you have already .
Grow lights aren't needed and I would recommend against them in the early game till you have a robust power supply. Just make sure the plant beds are getting 100% light in the middle of the day. If they don't have that move them to a place that does supply that. Keep them away from walls and railings.
I prefer to place them where my feet are in the water while watering them, it makes filling canteens and watering very quick and can be done with as little as 1 canteen.
Boiled water provides 35% hydration and dirty water provides 22%. But it simply isn't worth the bother to boil the water if you are standing in water while both filling and watering the beds.
Many people build a lot more planters but it simply isn't needed. That isn't to say there aren't reasons they do it, but it isn't necessary.
Planters will fill your veg meter but they don't help with the protein bar. For that you do need to either hunt or fish. Fishing and hunting rabbits and chickens with a bow are the best sources of protein in the early game. Leave large game till later and save your ammo.
The answer is, the more the better. If you can make them and keep them planted, watered, and fertilized, that's great.
I was running out of veggies when venturing out all of the time. I no longer do that because I grow most tomatoes and they grow really fast even without too much attention.

Why 5, you ask? Because of each type of crop. One each for;
- Carrots
- Onions
- Potatoes
- Tomatoes
- Miscellaneous crops (e.g., cotton or medicinal herbs)
If you've got the room in your base, I suggest building one plat bed each for every type of crop. At present, that would mean 6 plant beds.
This might not be enough, however, if you have multiple animal houses, or if you're in a multiplayer game where there's more mouths to feed.
