The closest survival game is currently Subsistence, which is better than the others, but each of its bullets is precious and will not be liked by ordinary people.
There is one other survival game that is more about what you describe and that's Survisland. However it seems to be going through a VERY slow remake at the moment so not sure I'd recommend it.
Thanks for telling me about Survisland, I noticed it a long time ago.
1. It is a single-player game, so you can imagine that it must simplify the survival factor.
2. Its food will not be corrupted like Green Hell.
3. It has no weather, and the most important thing for survival is how to survive the winter.
4. It is very similar to Stranded Deep, but there is no threat from animals. So you can only play building a house, without the fun of exploration.
5. A very important point. I haven’t seen his update log, so I guess development has stopped.
I don't think that the real or good survival games are the ones with zombies in them, i think other elements are involved to make a good survival, resource gathering, depth, world exploration, now I love big maps or worlds ready to explore but that exploration must feel that it's worth it to take our time to explore the map, i love games where the wild life and nature can be a threat and then if it has some more dangerous foes like other human npc's or monsters of some kind then i say bring it on.
I believe that games in early access have a huge rough diamond in their hands and by this i mean that they can always improve what one day will become the final product or game, sadly many early access games out there end up by not achieving it's full potential or the devs simply abandon them...I have seen a few of them going down that road, now money isn't an issue for me fortunately but i also don't like to waste it, that's why i have been very careful with the games i buy especially the ones labeled as early access.
Last night when watching a few videos about Subsistence i noticed that some people in forums like this one or comments were saying that the game doesn't get regualr updates or that they grow far apart from each other and this distance seems to have increased over time so i wonder how much interest is there from people playing it and more importantly from the dev itself, is the game getting content in the future is there a roadmap or a idea of one?
I also saw other games like or similar to Subsistence at least they appeared on youtube feed and Steam and those were The Infected, Mist Survival, Survive the Nights and another one called HumanitZ i also wanted to mention Sunkenland but again i have been out of the loop for a very long time so i don't know which survival game is worth investing time and how serious the devs are as to try to achieve the best for their product and pushing it forward.

When looking for survival games it really is on you to get a feel about them.
What I look for and the games that gave me what I wanted were surival games that I could customize turn off what I didnt want.
I love base building so dont like it everytime there is a major update it requires a new game. Subsistence has never had this.
Subsistence my top fav game to go back to, been with it for 2500 hours if you love base building. Very simplified game beautiful seasons and we can turn off the au hunters. It has a lot of content to sustain you for a long time. depends if the player wants instant gratification.
Subsistence is the kind of the game to get you thinking about what you want to do with it.
There is no Story.
So start designing.
I have spent a ton of time building a bridge across the whole map. Stuff like that. Its enjoyable and peaceful.
A new base on evey place in the main areas on the map.

Survisland. Naw its just too boring a Game as mechanics too clunky.
I also played it very slow game.
Most survival games we can turm off the monsters and enjoy the game if you like this I can recomend these games i played.

Green Hell is a very good game. One of the best for immersiveness speaking for myself..
You can turn off natives and customize your experience.
Played around 1220 hours been playing it since 2018.
Very immersive hard at first then gets easier.
Coop is great fun solo or single. The jungle is beautiful.
The Forest customizable great fun
Sons of the Forest loved this game we can use the cheatstick to spawn stuff.
The Infected. Very customizable. Enjoyable and can play on god mode. I love this game for the come back to. We lose our bases with big updates when new game required old saves nolonger work. But such a good game just for fun.. I just rebuild using screenshots :)
The Long Dark. has a story very nice game.
Valheim great game we can also use cmd consol to play in god mode. Great exploring loved it with friends.
Rust good game.
Mist Survival also not bad. But doesnt give me that want to play it and come back.
Hopefully they will give you something to consider on youtube.

You already replied to one question i had and that was deciding (if i get to that point) between Mist Survival or the Infected and it seems that people in general prefer the Infected, and much of it seems to be because the Infected feels like a better game when compared to the Mist Survival.
I have Valheim, it is a great game but I'm looking for a game that could provide some intense moments or even scary at times, what i look for in survival games are things like resource harvesting, base building yes but i don't go super hardcore or with a lot of complexity when building :) i love to explore the map and if it is a big map the better with verticality or some form of it like we can go down in bunkers, mines, explore caves and so on, crafting i love it, scavenging the world or enemies to build better parts for the base or better weapons. I love games where nature and wild life can cause problems, i can hunt, fish and so on. I would love to get to be able to find or come across bosses or world bosses that can spawn and reward players by taking them down (if the game doesn't have bosses it's perfetly fine).
The thing that has me looking around so much for a good survival game recently is that it has been a very long long time since i played DayZ, to be honest i installed it again a few days ago but it didn't gave me the feel that once did so i think me and DayZ are done i had awesome times in that game, i have met people in 2013 that to this day i can call friends but i'm looking for somethig new and good or that has potential to be very good but again it all depends if the devs want that for the game.
I also discovered a game called Survive the Nights i think i have heard of it before and that i even had it on Steam at some point but believe that the game had a rough start but seems to have improved maybe?
SOTF has some harvesting building up to us cave exploring that scary.

Why do survival games always have to fight zombies?

+1 for Green Hell it is a fun game with a different vibe than the usual survival game.
I would also recommend:
Project Zomboid top down view and offers 100% customization, also pretty hard until you know what you are doing.
No One Survived still needs a lot of work but it is slowly getting there.
Deadside if you want light survival/base building with super intense combat against military AI this one is for you. The whole map is hostile territory with patrols on the roads and actual missions you can complete.
Avoid SCUM at all cost, that game is a joke and 100% grind, plus they have been removing content from the game because of major performance issues:
- animals, replaced by a broken hunting mini game
- vehicles, there were planes, boats, bikes, trucks, cars all gone and replaced by 2 modular cars, if you find one you must push it to a trader to buy an engine!
Then they added the following game breaking mechanics:
- fame system whereas if your level is not high enough you cannot purchase anything from traders = no car engine for you newbie
- fog to the main PoI because of rendering issues but you now can't seen anything around you anymore
- hand abrasion, you get cuts and wounds from looting and need constant healing
- fatigue, you must rest/sleep in game(!!!) or your character will die from exhaustion
