One trick is to wait as long as you dare to cook it. Cooking meat "resets" its spoilage timer.
You can leave it in the fire too long and it becomes "burned meat." This has really low food value but does not spoil. Many people save these to use in the mass recycler for mass later on.
Obviously a refrigerator keeps meat from spoiling, but it takes some doing to build and to maintain a stable supply of electricity to it.
Finally, spoiled meat is not entirely worthless. It is used to make heat packs and (I believe) for fertilizer too.
This meat spoiling mechanic isn't easy, but I think it adds to the game. You never reach the point where food requires no effort. Especially in the early game you some times have to pass up easy food, because you can't use it fast enough.
