And real pirates do not go for the biggest ships out there. That requires too many crew, which is expensive and . Real pirates use small to mid sized ships for convoy raiding.
I like to use a pair of 4th rate frigates with their armament maxed out. Couple this with the traits and ship improvements that increase speed, and you have a pair of ships that can outgun any convoy and outrun the big galleons and ships of the line.
A better trade choice would be a carrack, which has a hold of 120 units (expandable to 180 with ship upgrade) and which only requires a crew of 110. Much cheaper to maintain, much easier to capture, and initial cost, if one is inclined to purchase one's ships, is less than half that of a manila.
A trade convoy of 5 carracks with upgraded cargo holds plus a 4th rate escort will carry almost 1000 units. That is a lot of tobacco.
