What are the Best Livestock content mods?

Not so much mods that make it easier or more lucrative. Just something that adds some more variety.

This is surprisingly hard to find outside cosmetics.

Other must have content mods are appreciated, but I want to focus on livestock for now.

I use Mizu's Quail and Mizu's Turkey mods. Adds a coop and barn animal respectively, with colour variants. Apart from those though, there does seem to be a lack of quality new production animals in mods, which is a shame.

I wouldn't mind that, as I find animals barely make money compared to crops, despite taking more effort. With the exception being pigs, cus truffles sell for a nice amount. But then having a farm full of just pigs wouldn't be as nice, as I like to have equal amounts of all of them.

it has many features and is pretty fleshed out.

its Mizu's Quail and Mizu's Turkey compatible also ^^

And for added game play you might like a mod called market town.
Run a market stall, shop , restaurant ect.

I love the Market mod, but unfortunately it just does weird stuff in multiplayer (mainly, you cannot set ownership and thus even if you set individual income you cannot manage it)... Tell me if I am wrong but... otherwise...
