Maybe it would bne more depressing to have to forage for your mushrooms out in the wild ;)
http://stardewvalleywiki.com/Fruit_Trees
"Fruit trees will produce silver star fruit after one year, and gold star fruit after two years."
So no need to feel depressed :)
Put your fruit into Kegs to turn them into wine, which is always no-star whether your fruit is no-star, silver, gold or iridium. Take the wine and put it into Casks in the cellar of your Farmhouse, which will over time upgrade them to Iridium quality, though you might want to harvest them at gold quality to make room for the next batch of wine as you can fill your farm with fruit trees and kegs, but the casks are limited to how many you can cram into the cellar. The increased value of Iridium star quality is not worth as much as getting another batch of gold star quality, unless you aren't backlogged by the limited number of casks.
