I did this process. Just make sure to back up your save. All you have to do is look for the number relating to your current skill, and change it to the number for the skill you want. Don't do something that the game can't create itself, like skipping to high level skills without actually getting the XP for them first. And don't try to like, change an integer for one skill to a completely different one, like Trapper to Geologist.
So like, 6-11 correspond to fishing. If you wanna switch from fisher to trapper, you should have a 6 somewhere, and you'd change it to 7. I personally switched my foraging skill from gatherer (13) to forester (12), so I'll be able to get Lumberjack later.
Because some of the later skills can make drastic changes based on your playstyle?
50% more for artisian goods could completely sway a players choice of playstyle,
75% more for fish? god yes.

This is a casual game, there's no reason for the player to be unable to change their skill.
In case anyone is editing the file they copied so they don't corrupt their other save, change the file names so that it will actually work. It doesn't mention it in the guide
