Sunflowers don't influence honey production, however they can be used to make cooking oil -- either the flower or seed can be put into the oil press. Since sunflowers give you more seeds back with each harvest (usually enough to replant the whole field plus a few left over), this makes sunflowers a great perennial crop -- buy them cheaply from the Joja Mart (they're the only item in the game that Joja sells cheaper than Pierre's shop does).
Several townfolk have flowers among their favourit items, too. Fairy Roses are Jas' favourite flower, Haley's is the Summer Spangle (colour doesn't matter, but she mentions at some point that she likes pink...), and Penny's is the Poppy off the top of my head. The wiki will have any I've forgotten, lol. I believe that honey is an ingredient in at least one recipe which is a favourite for one of the NPCs. Being an Artisan product, honey is also good as a generic gift if you don't have any favourite items available; I don't think any NPCs actually dislike honey although again check the wiki to be sure. But my point, here, is that honey production has some nice by-products if you're looking to make friends with certain NPCs, and honey itself is a good way to *ahem*... sweeten... your relationships around town.
