The chance of them finding more truffles after the first one of the day is increased by having a high friendship level (hearts). On average, a pig at max friendship will find 2-3 truffles per day as long as they have enough space.
Forging skills: Pretty basic as said before. Gatherer + Botanist will maximize your potential from the porkers for raw truffles + value. While you can in theory skip out on Botanist if you plan to process all of them anyway, without Gatherer you're missing a lot of potential.
Space: This comes down to two things, being barn and farm space. If you have spare room for more barns then feel free to add more pigs, but also keep in mind they will also need more food, obviously.
Manual labor: This comes mainly more after you have the Auto-Grabbers in your barns and/or coops. Pigs you still need to manually collect all the truffles and then process them (if you want to get oil, anyway.) which does make them a fair bit more time consuming than your other animals are because it's less 'passive' income like the others are with Auto-Grabbers. If you're fine with doing all that every day well, cool. Add more of them. If not, maybe keep their numbers lower. Because there's two other factors as well to consider. They need to be outside to do anything, and they don't come out in bad weather or period in winter.
40 truffles a day is a lot! If I have done my math correctly, 40 iridium truffles would get you like 50k! o.o
