Personally, I use "No More Accidental Exhaustion. It stops you from getting exhausted, which causes you to wake up with 50% energy the next day.

You can increase your max energy with Stardrops as well as decrease energy loss from using tools by upgrading your tools and leveling the professions tied to them:
Mining - Pickaxe
Foraging - Axe
Farming - Hoe and Watering Can
Fishing - Fishing Rod
You can regenerate Stamina by using the Bathhouse at the Railroad or by eating some of the forage you gather in the woods. There is plenty of stuff to gather to eat early on. Even more when Salmon Berries start spawning.
There is also a mod called "Health and Stamina Regeneration" which has youtr Health and Stamina regenerate on the fly if you take a break.

Why is being exhausted and not being able to continue with your day by 11 am fun?
There are plenty of IRL farmers that work 12 hour days 6 days a week and have plenty of energy to do so, so, where this energy system comes from I am not sure. I've always played this game with unlimited energy until the keep depricating the ability to activate it.
Because you can manage your stamina from day one by eating food you forage. The game is meant to have you slowly build up a farm, not get it all cleared out and ready for major harvests in a couple of days.
Personal preference but I'm just cautioning you to be wary disabling it. You'll find yourself sitting around with nothing to do when you can get everything done at once.
I mean that basically negates the concept of hard work. No thanks for me. I've been playing with unlimited energy through the whole game with WeMod already but that seems to not be working suddenly. I have never once ran out of things to do in the game. Fishing, mining, both things you can do forever.
I'm not trying to change the way you play or anything.
As for your mod not working, there are a half dozen mods on Nexus that will give you what you're looking for.
Another suggestion, if you're willing to use mods to begin with, instead of giving yourself unlimited energy, try one of the mods that adds a spa/fairy spring or whatever on your farm. It takes a little time, so there's a trade-off for using it instead of eating food, but early game it really does help. There are ones that add a bath to your house, as well, so you can jump in there and refill your energy as well.
By the end of the first Spring, however, managing your energy ceases to be a problem, so you will get through that phase fairly quickly either way.
I don't even understand how it could pose a problem.
I like the fact that at the beginning of the game you have little energy and everything seems difficult. It is realistic for someone who has been at a desk job and never worked outside to struggle at first with getting through basic chores. Have you ever chopped wood for more than an hour? Or dug rocks out of your garden to clear the soil? It is hard work, and while an accomplished farmer will know all the tricks and techniques to do it with as little energy as possible, and have built up their stamina to be able to do so for long periods, a novice coming straight from a desk job in the city to a run-down plot of land, with no one to teach them, would not. Just enjoy the immersion and imagine your character saying to him/herself, "man, I can't wait until I get better at this so I don't feel exhausted by noon, I'd better take a break and go fishing so I don't throw my back out."

just use cheats, or a save file editor to edit in a bunch of stardrops or something.
Another tip I've been using to great effect now early game is buying salad from the saloon. For a fairly low cost of 220g you get a food that gives 113 energy so basically max in early game. This will let you do a lot more each day and once you really get going on some fishing you'll be making enough gold per day to always have a few of those with you. Boom, energy problem solved.
