There's NPCs to socialize, build relationships and make friends, marriage, etc. And that's all in the vanilla game, mods can really expand it further for a lot of replayability.
You might also suggest Animal Paws it is similar to Stardew Valley but different graphics and you play as a cute animal.
You can totally ignore the villagers and not gift them then you will not get any cutscenes or dialog. You can play as a antisocial farmer and still enjoy the game, it is not a dating sim. That is only 1 aspect of the game if you choose to partake in it.
My partner watched me play Stardew Valley for countless hours and never showed an interest in playing.

It's also a way to interact with friends by visiting each other's islands, sending each other gifts in the mail, chatting about new developments...
Stardew is great and all, but it's not a substitute for Animal Crossing (and vice versa). They're very different.

SV multiplayer isn't cross-platform.
