No way to pause?

It only pauses in single player mode. If you're playing in Multiplayer, it won't pause unless the host pauses the game.

How does the host pause? (cause I'm the host and going in the menu is not pausing the game)

There is an apparently new tool in v1.4 that is better than a pause if you like how it works. Open your inventory, go to the Controls tab, scroll to the bottom, and make a Screenshot. What you get is not only your current view unobstructed, but the entire current map. It's almost like cheating, but it's native!
