All you need to know if you're talking about money
Personally I like every crop that drops multiple harvest. The spamming *blop* is pretty awesome.
I'm picking strawberries and potatoes. Not for a financial reason. Just for giggling because of the sounds.
First year before strawberry: It's close between potato and kale, but I will go with potato with chance of acquiring double potatos. All money should be saved to maximize to purchase strawberry.
First year after strawberry: Strawberry. If planned accordingly, you can harvest 3 times (20 plots only).
2nd year and beyond: My assumpiton is that every crop will be converted by jar/keg with artisan perk. Deluxe speed is used. All amount is per a plot in a season.

- Strawberry (At the beginning): 3,018. Harvest 6 itmes
- Rhubarb: 2,769: Harvest 3 times
- Kale: 2,070: Harvest 6 times
- Potato: 1,814.4: Harvest 6 times * 1.2 (double harvest chance)
- Garlic: 1,701. Harvest 9 itmes
- Cauliflower: 1,650. Harvest 3 times
- Strawberry (After 13th): 1,509. Harvest 3 times
- Coffee: 1,320. Harvest 11 times * 4 / 5 * 150
- Parsnip: 981. Harvest 9 times.
- Green Bean: 882. Harvest 7 times

There we go. The best crop is strawberry, providing that you have seeds at the beginning. Rhubarb is a great option if you have kegs to spare. If you prefer quicker turnaround with jar, kale, garlic or potato will do just fine.
