does better quality milk yield better quality cheese?
wondering if there is a difference in cheese from gold star milk vs regular milk. Should I sell the high quality milk as is or make it into cheese?

Quality of the milk doesn't affect quality of cheese. Milk of any quality will always produce normal quality cheese. Large milks will produce gold quality cheese. It's possible to age cheese to gradually increase its quality, but you need the final house upgrade to unlock casks.

ok, and I imagine cheese is always going to be worth more than milk regardless of the milks quality . . .

Actually irridium quality milk is more valuable than common quality cheese. Unless you have the artisan farming skill. However the cheese can be aged in a cask to increase its value.
