cheese is 200g per day
goat cheese is 375 every 2 days
cow = 200g+200g=400g in 2 days
goat = 375g in 2 days
So cows are technically better money, yeah, but goats are less work. It's really up to you, but I prefer the higher tier animals that I can forget about every other day.
In short cows are profitable early on, goats are a cash sink, sheep can be profitable (eventually) and pigs need a good foraging skill. The only other reason to keep goat is for cooking ingredients which cows are still more useful for.
How exactly does one go about making mods for this game. Maybe I could do something if I knew how.

Actually there's a type of goat that's sheered for its hair. The hair is called mohair. Anyway it turns out I'm allergic to computer programming so I'll leave modding to people better at programming than me.
Just as a Note for non Believes. 1 barn of cows will produce 1344 milk/cheese each year. Barns full of Goats will produce 672 milk/cheese each year. How ever your basement can't age but 1k cheeses each year. So no matter which you have chosen ageing cheese for profits will only make you 400,000 for cows and 504,000 for goats. (NOTE: cap will make you 750k for the 1k yearly but will require 2 barns and will give extra unaged cheese each year.) Sheep can bring 631,680 worth in cloth per barn per year.
Now if you see fit to push the confides of the farm you could make the Cask Basement into a Loom basement, hehehe.. This will allow you to produce 56,000 cloth a year for 26,320,000 gold but that is allot of sheep and this assumes your in the bed every night by 6pm and put more wool in every night before bed. :)
They only find truffles while outside and they're useless in winter.
Cash animals are (in order of profits)
Chickens, Cows, Ducks, Sheep and Pigs
Can pay back all costs associated within a season or so
Filler animals are
Rabbits and Goats
Mainly used for community bundles
Ducks can be incubated and sold making them a viable but not great for cash purposes despite only producing 1 time every 2 days. Largest coops are mainly there to free up the player so they do not need to feed the animals personally every day (winter/rain) and they don't really make sense cost wise in any other way.
Barns are not much better small is cheap paying off fast and middle sized is almost useless this time (roughly 0.25% pregnancy chance a night). The Largest barns have an auto feeder but still need to visit animals almost every day for produce however more profitable animals are available.
That assumes you have 500 sheep... that you have a 4.5 heart rating with... that you have time to sheer every day... that you also process into wool each day... that don't drive you maad...

Also Another note for going Rabbits for cloth is you can go with the Artisan talent and then all Cloth will be worth 658 instead of 470.
