Do Trees produce goods in the Winter?
or should i just cut em down and re-plant next season?

Also, will planted trees start growing when spring rolls around or do they have to be re-planted?

Cutting them down would mean you would need to re-purchase and re-plant them. Just leave them alone and they'll start producing again during whatever season they can be harvested in.

Fruit trees only produce fruits in certain season, unless you plant them in the greenhouse. Greenhouse allows trees to produce all fruits in every season. Even though you plant fruit trees on the farm not in greenhouse, do not cut them down, it's not worthing it. Other trees you can do whatever you like.

Fruit trees only produce fruit in one of the 4 seasons, the season depending on that particular tree. Wild trees when tapped will produce syrup all year round. When you shake a maple tree in winter a hazelnut might fall out. Shaking trees might make them drop seeds. Oak seeds sell for 20 while the others sell for 5. When grown in a greenhouse, I believe fruit trees will produce goods every day forever. I haven't tested that though.

However, if you are asking about wild trees, your taps will produce all year round.

The Wild trees is what i was mainly asking about, thanks. I have a few tapped trees next to my crops farm but i was considering cutting em down to expand farming area.

You can actually tap trees outside your farm. I have the trees at the bus stop tapped. They periodically give me oak resin and maple syrup. You can do the same thing with the pine trees north of the farm in the backwoods area if you want pine tar. Or trees anywhere but I find those locations to be most convenient.

I, too, have the bus stop trees tapped, and, I planted a five more trees there which are also tapped.

There is also a good spot just below your southern entrance, west of Marnie's I have eight more tapped trees there + tapping the pine trees on the left.
