I didn't know they made a remake. I was just confused because the store entry says 2016, but wikipedia says the first game came out in 2011

2016 was just the date that it was translated and released into English. This is the first game, then Steins;Gate 0 is a sequel / alternative story that you can play after. Elite is a remake of this game made using assets from the anime series rather than the original art. All of the other games that include the name Steins;Gate are smaller scope side-games.

Steins;Gate the original VN is the best content wise but Steins;Gate Elite is also good in my opinion.
The main thing is that it's more anime based, so I would recommend watching anime before playing Elite, cause it is kinda similar and you can explore different endings adapted in the anime artstyle that we don't see in anime.
Elite just cuts few things from the original that's also why the original is better.
I wouldn't say that Elite is terrible, it's quite good if you enjoyed the anime.
Just have fun with Steins;Gate !

When you said the first game, are you referring to the stein;gates series in particular or the whole series as a whole?

Since there are also other games that are set in the same universe like chaos;head/child or robotic;notes and they also share the same enemy "Comitte of 300"

For Steins;gate series only. This is the first game, then you can go with stein;gate 0. There is also Stein;gate Linear Bounded Program, which kind of like a side story. But you can only get it by purchasing steins;gate elite. I recommend playing the Linear Bounded program before playing Steins;gate 0. As for the elite. Its up to you.

As for the STEINS;GATE: My Darling's Embrace. This is just a side story and its just for a comedy romance genre for the series. You can play this after finishing the other steins;gate series.

But for the whole franchise, there are lots of them and they are set in the same universe.
