Difference between the anime and the game?
Or is the anime just the "surface" and the VN go in much greater detail of what is happening and why?

Pretty much this. The VN is basically the same story but there are way more scenes and details.
The anime follows the "true end" route of the game, but the game has multiple endings you can achieve. So you wont find a totally new story if you know the anime already but a more detailed version of the same story with some variations and the possibility to change the story into directions the anime did not go.

the anime is an adaption of the VN, and after reading this, you may even think it's a poor adaption, because they never show okabe's inner monologue, it's fine at getting the point across, but there's SO much more the VN has.

Because there are a lot of anime adaptions that are either not very faithful to the source VN, change a lot or just suck in comparsion.
Its not unreasoable to ask about those things before you spend money on something.

The VN will always have more content and more extent to the title. Also, I think VN if they are well written and know how to time the BGM, they can make the experience even more enjoyable.

Even clannad, which was an excellent anime adaption from the VN, still lacks on deep about the characters and their different routes.

In the animes, I dont feel the epic moments as epics and remarkable as they r in manga/Vn's. Instead, in the VN, its just unforgettable.

no doubt, compared to other vn's turned anime, steins;gate may very well be the best, HOWEVER... my point still stands, you don't see the full extent of okabe's chuunibyou or really any of the deep underlying facts or buildup to his madness/etc... also the time travel aspects aren't explained that much at all in the anime, whereas they're fully and deeply covered in the VN leaving little to no plot holes which is amazing in a topic like this.

Of course, want to see the whole scenario playing out then playing the original VN is a must. Just saying the anime adaption was a good example of adaptation done right.

Is there actually a case where the anime is better than the manga/VN? I don't think so, just like with books and movies (though Lord of the Rings/Hobbit are on par, imo...but that cost HOW MUCH??).

It is like trying to find dub anime that are better than sub anime.

Personally, I like VN better is because usually most anime I saw that were based off on VN were rush or lacking.

I actually found I enjoyed the dub better for Steins Gate (in no way saying the sub was bad as it was very good as well). I found the dub to display the characters in a more personable way if that makes sense. This is probably the only anime that the case is I enjoy the dub more. :)

There are plenty of examples where a theatrical release was superior to the source material.
One is example is Kubrick's films; almost all his films were better known (and better) than the novels themselves.
Coppola is another director.
