First, play either Steins;Gate or Steins;Gate: Elite. They're both the same story, but Elite uses the footage from the anime, so it's animated instead of the still (albeit more unique) art of the original.
Then, play Steins;Gate 0. It actually takes place in the middle of the original S;G, but is designed to be played after you finish the original.

Finally, you can play LBP and Darling if you want after, but they're not essential to the story. They take place in alternate timelines.

You can start on the original Steins;Gate for the most accessible gateway entry or on Chaos;Head if you don't care and want to read the Science Adventures chronologically. The latter choice might be alienating because it's an old visual novel with a good number of flaws, though.

I also don't recommend S;G Elite because it's overpriced and you can easily just watch the anime and play the VN separately instead of mixing them into some hodgepodge software concoction, unless you really want to see a few new scenes in animation, plus it's the only way to obtain Linear Bounded Phenogram.
