I think I tended to bait out Rin's breach arts and countered with my own followed by an aerial rave combo to get through that. It's been a while though.
I should also mention that Daidoji vs Rin is literally the hardest battle in the game, so uh... yeah.

Jumping heavy attacks delivered as a counter to her breach attacks could help make a dent in her HP if perfect guards aren't something that you feel comfortable with just yet.
It's about timing. While Rin flash stepping from one spot to another gives the visual illusion that she's untouchable, in reality her hitbox is still there.
Once you start learning to judge the distance correctly based on her appearance between flash steps, you can start charging your Breach Art, then have it execute in her face at full charge before she can do any real damage to you, even if you take 2 or 3 hits. Easy A rank.
Grinding your way through it is probably the best solution. I think I got her at lvl 27, but that involved a ton of blocking, parrying and luck (as in - don't get caught in her arts). And as FauxFurry said before, jumping heavy attacks also help a lot.
