Sneak Attack?
After reading a few different things about this game here and there, I've noticed a few people mention the best way to take down harder (human) enemies is to start with a sneak attack but I can't find any information about how to perform one. I've snuck up behind them and attacked, but nothing works.

There isn't a stealth attack as far as I'm aware but I do think you deal bonus damage when you attack unsuspecting enemies.

Well considering how weak your initial attack is, I can't imagine that a sneak attack would deal that much extra damage unless it calculates it into the full combo.

Then again, I am still using one of the beginner horned swords that I stole from someone.

Sneaking is for just that... sneaking. In this game, early on you actually need to avoid enemies. That fact may be my most favorite thing about the game. The placement of enemies and their set levels make for a more realistic world to me.

So far I've only had to run from a slugbeast and a mountain troll. Everything else I've managed to take down on Normal mode. I honestly don't understand why people constantly say you need to run from most fights early on. Some fights are a challenge (looking at you Reaver camps), but even the giant bugs and the Forlorns aren't that hard to deal with.

You should still avoid most fights untill you are lvl ±10 and can equip some decent weapons. And that is easily achieved -- I got to that point by talking.
Without telling level details and equipment, it is pointless. Around level 10 one can kill a multitude of beasts in Edan and Abessa. Earlier, Jackals, Rippers, Skex, Terror Bird and Chimeras simply rip you into pieces, for example. Or the group of Albs you need to eliminate for Nezol. They draw their laser weapons, and you cannot even get close then, if you try to do that as a melee attacker.

Next there is a level gap to the more fearsome beasts, such as Slug Beast, Moloch, Alb Colossus, Cyclops, Ice Troll, Mountain Troll.

Sure, if you pump your skill points into non-combat skills to exploit dialogue options, even lvl 15 will be still to low to kill early mobs. I found myself capable of beating humaniod enemies, especially albs at around lvl 15. But those albs on Nezol Q gave me a beatig due to their high nubmers. I had to use grenades to kill half of them. Then those green monsters appeared of nowhere and pulled the rest of albs from me.

BTW is there a highier tier of monsters after Moloch and others? I am currently at lvl 25 and these monsters don't pose a real threat to me. I encountered some unpronounceable monsters that yield arouns 325 exp. I guess these are of higher tier.
The Swamp Spider nests are in that area for a reason. Just get close to the nests, and the spiders will pop up.

Ice Troll 360 XP, Cyclops 400 XP, Mountain Troll - levels 61-70.

I think I went for dialogue options because I'm around level 15 and I'm only able to use the horned sword and a cultivator's bow. Been trying to get more attribute points but now I'm to the point where it's taking 2:1, so it's a very slow process to reach the 50s and 60s where I need to be in order to use the vast array of weapons I have. I've collected probably a solid 20+ weapons that I can't even use simply because everything requires 50+ on my stats.

Do not forget about upgrading your basic weapons -- damage boost is considerable, while stats curve is not steep. And there is a nice sword in the Mosoleum, where you are sent by mana-shrine-dude-watcher. It has moderate stat requirements and 45 dmg (I think).

I have about 10 different one-handed swords and the ones with high damage all have high stat requirements. I've looked into upgrading my basic weapons (even my cultivator bow) and it will put the stats way out of my reach.

I'm hoping there is a lot more to this game because I'm taking down enemies in all areas at level 14. I just bought a Flamethrower from the Clerics and combined with Arx, most enemies can't even get off the ground.

Is there a faster way to gain experience aside from the talents that give more exp for X action? I still haven't joined a faction because I'm not sure how I want to play. I'm enjoying the shotguns, but also the heavy weapons (aside from the fact that I can't run with my flamethrower equipped). I know I don't want to side with the Berserkers simply because the magic in this game isn't my style of magic I tend to learn towards.

Flamer and Plasma Rifle (explosive shot) break the game. 100% stunlock enemy ruins all the fun. I suggest that, if you want to continue having a fun challenge, don't use either of these weapons. They will spoil you and make you hate this game. Also Cleric Black Hole ability is OP in much the same way except it does it to an entire group of enemies for only 5 mp per use and it's spammable. Also for some reason Cleric get's a nice amulet that can regen their power unlike Berserkers. Not like Cleric needs it, those energy pots are super easy to make with infinite mats from shop and cheap unlike mana pots where you have to farm plants. Their lead game designer was huffing something when he allowed these decisions through. The funny thing is some of the other cleric abilities do the exact same damage to either group or single-target but they have a longer cooldown. No reason to use any other ability but Black Hole. I don't get how this studio took a huge step back from Risen. Is this a new team straight out of game design school and the vets who made their previous titles retired?
