Destroying the turrets may be the easiest solution, if the bullets are the issue you can use telekinesis on a body or luggage case to act as a shield while you walk past the turrets.
I was thinking the same after I left, and was wondering if carrying the body, if your quick, release as in just drop it, not launch it, the body would likely blow the turret if this fails. I'll try this on the next turret i come across and see if I can hack without bolting it first, you can hack cameras without bolting them.
Another trick, if you opt for it, freezing things also permits a hack AND slows down the fluid.
I usually try and have at least 4 plasmid slots so i can always have Bolt, Incarcerate, slot 3 shares telekenisis and Sonic boom - which is great for pushing enemies into various traps, and the 4th one I use for Enrage/Sec. bullseye and another similar one, don't want to spoil so i won't mention it. All 3 remind me of tomatoes. Once you clear med. pavilion, you will have access to gene banks. Most people like the bees plasmid, I prefer the trap 1 if I unlock plasmid slot 5.
