How to dig land to get water? I have clicked a shovel, but it's nothing happened.

You need to use units to dig the moat that you've highlighted. Most units can dig but not all.

Do you mean peasants can dig? I have two free peasants near the fire, but they are not responding? Do you mean that warriors can dig?

Engineers, pikemen/halberds, archers, macemen, slaves are some of those that can dig. (slaves being the cheapest)

Note to remove your moats you use the Destroy command (the X), other lords moats however need to be filled with the x-shovel using your men.

only a few units and dig moat. Like @stryder said above. Just simply tap shovel draw some moat lines, select these units, tap on the moat. Ofc, unlike games such as aoe, you only need to use left cursor. Your cursor will take shape of a shovel as you command your units, and your units will start digging. To be fair, the moat isn't really useful unless you're against nizar. Most unit will die to crossbowman if you camp on your keep.
