Download the unofficial crusader patch, install it and disable the magic bar for extreme and just play extreme. This way, you can play without all the lame magic and you can benefit from the near infinite unit cap.
As Augustus said, you have the magic in extreme, which makes the game easier, not harder, and the default maps have buildings that spawn rediculous amounts of troops. These buildings work in regular crusader too, so it's not extreme being harder, just the default maps being different.
If you want neither of these,as Augustus said, use ucp to disable magic bar (or simply decide not to use it), and copy the regular crusader maps into extreme (this is done by copying the contents of the "maps" folder in the installation folder, and pasting them into the "mapsExtreme" folder in the same place.
Again,as Augustus said, the main benefit of extreme is the increased unit limit, it is 4x higher than in regular crusader.
