How many episodes is Umineko getting in total?
From Google it's plain to see that Higurashi has been said to be receiving 14 episodes in total, but on the other hand there seems to be no word on how many episodes Umineko is receiving? =/

There are 4 question arcs and 4 answer arcs obviously but will there be any extra arcs being released, much like the extra episodes of Higurashi?

There is no answer arcs in Umineko series.

4 question arcs (Umineko no Naku Koro ni)
4 core arcs (Umineko no Naku Koro ni Chiru)
Collection of the extra tips (Umineko no Naku Koro ni Tsubasa)
2 side stories (Umineko no Naku Koro ni Hane)

As far as I know they never said which chapters will be released. Let's hope that they'll release all existing chapters.

I'm confused, did a Chiru anime get announced? Or is this person asking how many episodes the already existing Anime has?

There is no Umineko anime.

Each of the chapters in Umineko is referred to as an "Episode". Has nothing to do with the anime.

I haven't read Hana and Tsubasa yet, but why are they non-canon? Aren't just a few of the TIPS non-canon?

It's not cannon because Umineko Chiru episode 4 ends the series as Higurashi Kai Matsuribayashi ends the Higurashi series. Ever wonder why they called Higurashi Rei an OVA? it's an add on and not important.

I don't think it's a matter of Tsubasa and Hane being "non-canon", so much as it is that they are side-stories with limited bearing on the main games.

Higurashi's Rei and Hou are the same, save for Rei's Saikoroshi chapter, which is very solidly an epilogue for the Higurashi storyline.

I'd assume at least the question and core arcs are going to be released, though since the store page image says "Question Arc" on it I'm also taking a guess the core arcs will be released separately.

In the case of the Umineko anime, isn't it easy to accept it as a completely separate chess board that wasn't in the VNs and that went differently? I mean, the entire universe it sets up allows for something to be non-game-canon and yet universe-canon.

That doesn't make it non-canon. Ryukishi07's noted that several of the extra arcs are perfectly canon and are meant to add to one's understanding of the core store and characters. Only a few are non-canon, mostly the comedic arcs for both series.
