And despite the fact you can use keyboard and controller (as much as any other simulator . . controller and keyboard will only make it harder and almost-impossible, respectivelly), it is better with FFB wheel (and FFB is amazing).
If you want other than just kart experience, I suggest rFactor 2, Automobilista 2 and Assetto Corsa Competizione, still the feeling through FFB and the physics for karts, KartKraft still the king (but KartKraft dont have multiplayer, the only real downside of KartKraft because the karts and tracks it have are amazing).

And I doubt KartKraft is playable with VR controllers, no idea how it would work for that or even if it is possible, but a Force Feedback wheel, for a simulator such as KartKraft and the other simulators I mentioned, is much more immersive than just VR, the feeling of the kart in your hands (kart reactions, track details and engine torque) is something outstanding at KartKraft and totally worth it, if you ever consider it.

Probably he made it work through Steam Bigpicture ... but the driving was somewhat hard for him with these VR controllers.
When you are good at it, the equipment you use may make it harder but not impossible.
Dont know how they set up to be manageable but still ... doable.
