1. Go ranged (guns) to have a good time. Melee is pretty much 'broken' in Risen 2. Magic is non-existent.
2. Companions make all the difference. You can have your companion 'tank' everything in the game while you roll around being completely invincible. When your companion has aggro, you can help him/her kill the opponents and when you get aggro again and can't handle the heat, go back to rolling. You'll need to think about what you want to do with this mechanic. On the first island, you want to do as much as possible while you have a companion and only then continue the main quest which will temporarily put you without a companion. On the other hand, when you find the game becomes way too easy, and eventually it will, you may want to play without a companion to avoid getting bored from lack of challenge.
2. Are the companions invincible? How do I roll? I found the button to jump.
Ranged = muskets or shotguns, but muskets are generally considered better than shotguns. Throwing coconuts is just a fun thing they added. Pistols are a side weapon. Look at your skill tree; you'll find a skill that will increase pistol accuracy.
Companions can't be killed but they can be temporarily downed, leaving you to fight the remaining opponents. So in harder fights, you will need to help them.
Dodge rolling was double tap iirc, so tap the 'Left' or 'Right' or 'Back' key twice.
1. Like the pistols and the sand, the coconuts fall into the combat category of "Dirty Tricks". I'm not entirely sure, but I believe the idea is that you throw them at your enemies in order to stun them. As for the pistols, increasing your dexterity makes you more accurate with them, but it's also a matter of distance between you and your opponent. The closer you are, the more likely you are to hit.
Depends on your controller, I suppose, but here someone explains how to roll when using an Xbox 360 controller: http://steamcommunity.com/app/40390/discussions/0/864971765605581284/
