I don't mind updates but will I always have to be online? Be online sometimes or will I only be checked for being online like once a week?

That's a misconception / blatant lie (mostly by salty pirates trying to boycott Denuvo)
It only requires a one time connection when:
Running the newly installed game
Having a major hardware change done to your PC (such as replacing your graphics card) or a major software change (such as installing a Windows update pack - those big ones that come out once every couple months)
From what I (and others) playing Denuvo experienced, nope, it doesn't require internet connection.

After that play to your heart's content in offline mode.
Notice how "play the game" is not on that list. :)
Games that require you to be online during play will (and have to) state up front that "a persistent internet connection is required to play". For examples: Diablo III, or World of Warcraft.
