None of them are like Gothic and Risen.
Vampire Bloodlines, Two Worlds, Oblivion, Fallout New Vegas are the nearest to Gothic and Risen in graphics and 3D playstyle.
Difficulty and sense of progression is the nearest game Eschalon but its an isometric rpg and not 3D
But game world wise and sense of immersion none of these games can even hold a tiny candle against Gothic and Risen.
Most of them have in addition really boring dialogues. Better voice overs yes - but listening to these rpgs which takes them way to serious puts me off a lot. I guess most people like rpgs which are overly dramatic and serious. But I like the light-hearted gothic/risen dialogues full of fun and sarcasm.
I think Fallout New Vegas was one of the coolest but it crashes so often and mid-game it started to corrupt every 2nd save - and all the mods and fixes wont do a thing if this begins to start happening to you.
Vampire Bloodlines I regularly play again but its not open world - but you get new areas as you progress through the main quest - and the areas are tiny.
I had fun with The Witcher 2, but the 1st one mostly plays in a city and the combat is not my taste. Witcher 3 is nothing special to me - I also hate the ending and the game forcing me to play Ciri.
Mass Effect 1 and 2 are great but they are more shoots than rpgs.
Drakensang was good but if falls apart in the end game. The battles are insanely hard and boring ^^. Same goes for Anachronox. Excellent at the start to mid game. The ending is totally stupid. They are both 3D-party base rpgs, though
Oblivon is also in some regards very risen-like. But the overly-friendly voice overs kill it for me. I hate how everyone is treating me like my character is a prince. And the level-scalling kills it for me every time after I get to level 15 or so.
If you wanna have fun I would recommend playing Nehrim and Enderal. You need Oblivion of Nehrim and Skyrim for Enderal. They are story driven total conversions which are way better than Oblivon and Skyrim. And free - costs nothing. They have nothing to do with Oblivion or Skyrim - they just use the engine for their purpose.
The only bad thing about these two are the stories and the never ending main quest dialogues. But the game world design is even better than Piranha Bytes, there is a sense of progression, people often treat you like sh!t and they both are somehow unforgiving - at least in the beginning. And you can just ignore the main quest if you dont like it. I put in at least 300-400 hours into Nehrim and 140 into Enderal.

Two top tips right here. Also Two Worlds, first one more so, the second one didn't grab me that much.
Yeah there are no games like Risen and Gothic at all. So I try to get some aspects of it from other games.
Regarding Outward: I never played it but only watched some videos. It looks very eastern to me. Besides it I didnt see anything in those videos which reminded me of Gothic or Risen. It seems to me the difficult combat is what people triggers to say its Risen-like. Its on sale now so maybe I buy it if I dont have anything better to do ^^.
Kingdoms of Amalur I didnt like even a little bit. The respawning destructable chests pi$$ed me off completely. And the combat system is way to actiony for my taste. I like the down to earth combat in Risen, which has no hollywood-style moves.
I also tried Divinity and got about 40 % through but then I was done with it. I hated the dialog - every single line. Even just reading it was a torture for me. All the dialog sounds very unnatural to me. Some of the quests are totally stupid like the cat quest in the starting town. The combat is ok, though. What I disliked the most is the character progression. You never get in the situation something is too strong or too weak because the whole progression system is designed in a way you only have the illusion of freedom but in reality you have none. Its hard to describe. The skills you can choose are all designed in a way that you wont get too strong or too weak and you cant enter areas before the game lets you. Its not bad but it just dont catch my imagination and I will probably never replay it.

- Gothic 1,2,3 (duh) - well it's risen's grandfather...,
- recent Chronicles of Myrtana Archolos - despite being a mod the amount of content and quality is astounding, in my opinion it's Gothic 2.5,
- Risen 2 (i have'nt played 3, addionaly I heard mixed things about it) - if you dig Pirate theme
- Two Worlds II - 'polish gothic' - similiar gameplay but with less budget,
- Kingdom Come: Deliverance - similiar feel of being a nobody and climbing to the top + combat focused on 1v1 duels and HARSH beginning,
- Outward - it's 'open world gothic' If I could describe it with one sentance, it has intresting magic system (how you get mana in the first place in particular) but it has weak story (most ppl ignore it xD),
Action RPGs:
- Mass Effect 1,2,3(approach Andromeda with coution) - one of the best action RPG series, especialy if you dig/stand SCI-FI
- Skyrim - I hope i don't need to elaborate,
- Fallout New Vegas - best fallout story wise, a 'shooter rpg' with good story,
- Witcher 2 & 3 (1 too if you can stand old graphics and 'intresting' combat mechanic) - more of a slasher with RPG number with great stories,
- Kingdoms of Amalur: Reckoning - even more of a slasher with RPG number, forgotten but decent,
RPG with huge freedom of creating you character:
- pathfinder games - Huge freedom in creating your charcter + intresting stories and choices that matter. Howevery they tend do discourage casual player at the end (kingmaker especialy) and some can dislike more tactic combat,
- Dragon Age origins - Idk what to say rly, one of the well known,
I never feel threatened and my adrenaline has never risen in that game ^^.
