HEAT ammo is overperfoming.
Especially on the German side where they are easily able to penetrate kv-1, is-2 and the like, a short 75mm stug 3 can easily kill an is2 with heat, not to mention how horrible the accuracy of Soviet tanks is.

First of all both HEAT penetration and armor value of a tanks are right from historical point of view. German 75mm HEAT rounds are and were able to pierce KV and IS series frontally because HEAT shell type C has armor penetration value of 110-115mm of steel. Second if you notice how short barrel German howitzer shoots its HEAT rounds you notice that it has curved ballistic trajectory so if the round land on top plate between turret and frontal armor there is nothing you can do about that as top armor is usually thinner on all armored vehicles. So I would say get better with positioning of your vehicles in combat and do not expect them to be invulnerable.

HEAT was indeed very powerful. The reason why it didn't simply replace AP is because HEAT rounds have much worse ballistic performance.

I would say if you have this question do some research. Like read something or watch a docu series. But I'll keep it short. T-34 with it's 76mm gun was not very potent in AT duties due to low velocity of the gun. That's why some of T-34 were issued with 57mm gun which had higher velocity and better penetration values and were given designation tank destroying. Later versions were given upgraded turret and 85mm gun which was even more potent. But to answer your question depends on version of a StuG III because earlier models had armour protection of 50mm and newer models had up to 80mm. Don't forget that it has low profile and it's a assault gun which has no turret so whole armour is one superstructure so it is mechanically more resilient to incoming fire compared to let's say Pz IV. Plus look at ammo composition of T-34 mostly it has HE rounds loaded ( something similar to what was happening during the war ) due to the fact that mainstay AT duties were conducted by towed AT guns or SU series of vehicles.

10 machines were built in September 1941 in Kharkiv and given to 21st brigade. By the time of October 30 1941 all of those machines were lost. Even Soviets mention tank/destroyer in their reports ( istrebitel ). During 1943 June and August 4 more such tanks were made but after that priority was given to 85mm. Given tank never had designation as it has in game it was just called T-34. Don't you worry my friend I'm fluent in russian and can read my reports in original too. Guy was just talking why T-34 struggles against StuG III
