105mm has pretty LOL blast effect and shrapnel spread so it usually do not flatten target area as much as you want it to. I would sau M7 is okay for counter battery fire when you targeting crew of enemy guns but for area clearing I would say M4 105mm HVSS

i need something with maybe 420-450 to take out german rocket before they get in range

Well both of them got WP rounds to clean fortified AT guns or trenches, buildings and whatnot, but for artillery the priest is definitely better because you are able to shoot behind cover and you can also easily retreat in case of a counter attack, with the long tom this is troublesome you need a few trucks nearby.

they can only attack what they see, if you manage to flank them by using ridges buildings hillsides you can easily get it done especially hills, because they can only hit the area behind you but not directly behind the hillside, you can manage this with the M7 priest because if you drive a bit uphill you get a very steep firing angle enough to take out everything behind, alternatively you could use a P47, but ive seen em getting roasted by Flak18 so use whatever you prefer.

Do you play multiplayer or a specific mission ?

German rocket artillery have not that big of a range 250+- something if I recall correctly so to counter it you can use 105mm as it has bigger range and they cannot counter you back. Plus it is fairly easy to deal with their artillery and field guns if you can spot them before. Use dedicated scouts, commander with binoculars or stealthy infantry. Scout ahead and bombard them to pieces
