Company of Heroes 3 is kind of the opposite in many ways. Fast paced and focused more on flash over realism or authenticity. The controls and UI take a little getting used to on Gates of Hell, but if you come from Men of War it's pretty identical.
on the bright side you can just immediately hide it in your steam library. gates of hell is not a lesser game for it, it's damn good. i just hate the thought of giving money to the CtA devs.
No one can tell you what sort of games you like to play. That's a personal thing.
I suggest you go and watch some YouTube videos of the game.
Once you've watched a few videos come back and ask more specific questions.

The items listed under "Modern Warfare" are for Call To Arms.
The items listed under "World War 2" are for Gates of Hell.
Call To Arms (created by a different development team) is required to play Gates of Hell. Basically you need to purcahse CtA in order to get a license to use the GEM2 game engine.
The setting for CtA is a modern war in the Middle East (not WWII). You don't need to have CtA installed to play GoH you just need to own it.
In the base version of GoH called "Ostfront" you can play as Germany or the USSR. Only those two nations are in the base game.
GoH also has two DLCs available
1) Talvisota (The Winter War and Continuation War) - This DLC adds Finland to the nations you can play. The Winter War and Continuation War. If you own Talvisota you can play as Germany, Finland or the USSR.
2) Scorched Earth - SE adds some maps, some single player scenarios (both standalone and Grand Campaign) and a fourth doctrine for Germany and the USSR. It's called the "Support" doctrine.
There is a third DLC called "Liberation" which has not been released just yet. It is due "soon". Probably "very soon" (like after the sale ends?). It will introduce the Western Front to GoH. I believe it only includes the USA and not the UK, Canada or other nations that's were active post D-Day. "Liberation" is NOT included in the bundle.
For Call to Arms i would not recomend to buy more than needed, simply because it is a dead game. It is not a bad game in itself, but the devs left the ship. So nothing to support there.
GOH meanwhile is a more realistic MOW, far more than any MOW to date. The campaigns, however, still remain conventional like in other MOWs (i.e., it's just a series of pre-set missions without any alternative outcomes other than victory). There is also a Conquest (Dynamic Campaign) mode, which is probably what you were referring to as being similar to Wargame. And well, it's basically a Wargame/Steel Division-like mode, though it gives you freedom to choose whatever units from whatever war period you want instead of forcing you into a single more-or-less pre-set scenario
(btw the new MoW 2 returns to CoH style, don't get MoW2)
