AI accuracy against infantry with those guns, as you noted, is a dicey prospect. If you happen to get some guys in range, a grenade makes fast work of the crew.

AT guns are overbuffed on purpose. The only way to counter is either with your own AT gun, a meme gun or Arty.
Another way is to hide infantry in bushes near areas you think Support weapons may cross over.
Just as Tanks mostly take roads, the Support Weapons will take the most direct route (Similar to infantry routes). Often placing 1-3 guys with grenades, or Rifle Grenades, hidden in a bush, on Do not fire, or Return fire, and literally just have them posted up to Hunt Support weapons.
Not only do they give you scouting and increased vision while hiding in the bush, which is valuable intel, but when you see a support weapon roll up, run up and grenade it from the sides, or just start blasting the crew. Then duck back into the bushes again.
Another way is to use fast attack vehicles, whether armoured cars, or Halftracks, hell even a Kubelwagon with a couple dudes loaded into it.
Flank around the side, and try to sneak up on it. Then tow it back home with the car if it allows for it.
With the latest nerf to Mortars, it's really a gamble on whether the mortars will hit the Support crew before they obliterate your own men.
Another point, is try to position your guys in such a way Support weapons cannot hit them. Use Barbwire to lure Infantry or tanks into Killing Fields, while also keeping your own units shielded by the Terrain, or buildings, etc. Not always possible, but in most of the new Finnish maps, theres almost always a place you can hide.
I try to place my units to the sides of Capture points, never in them. The AI will try to secure the point, and charge at it, so having units hidden on the flanks often gives better lines of fire / ambush. Though on some maps that are just fields you'll really just need to be quick on the scouting / binoculars and hope to hit them before they hit you.
You can also smoke your own guys, blocking vision, and use side scouts to still give you vision, but the AI will now be blind, buying you time to flank, or bombard said Support weapons.
Or a bomber... Or flanking with infantry... or a tank round...
Another tactic against ai field gun is to lure the gun to aim at infantry behind cover while others flank. Easy to pull off in city map.
