If you want nerfed weapons, then use white/green rarity/tier of weapons in the game, they are the basic weapons and nerfed in comparison to higher rarity/tiers.
Gearbox nixxed some gameplay cheats that players were exploiting, but game hasn't been updated in years, so some exploits may still be done.
Check NexusMods for modded weapons and items. You can download savegames from there that have such modded stuff, and copy & load the savegame in your game to use that OP (overpowered) stuff.

As mentioned above, some of the nerfs were usually "unintended" interactions with the weapons, for example getting extra projectiles from bonus element anointments. Amara with a Recursion could crash your game or kick you out of your co-op session.
Aside from those, some of the more notable nerfs were on the Kaoson, Sand Hawk, Yellowcake (apparently it was using the wrong weapon type damage scaling) and The Lob (was buffed into a 3-burst shot, then toned down to 1). They still are decent weapons.
Lootlemon have also included change logs on all weapons, so if you're curious, you can just look up a weapon there. Here's one for the Butcher:
