Also, certain Legendaries only drop at minimum Mayhem levels.

Solved it for you. No spreadsheets or calculators needed and yes, the Mayhem level is listed on the weapon card. Mayhem weapons also have annointments that give extra effects for certain classes or after using your action skill. Just play around with it and it'll explain itself.
Also, check the modifiers when increasing the Mayhem level. You can reroll them for free to see different effects for added difficulty or new mechanics like making your character speed through the levels or creating a lootsplosion when you kill an enemy with a critical.
so after 2 whole hours of boss hunting, i've gotten 0 upgrades because it's just racks of garbage that don't push any numbers (or they are a minor upgrade with 40 points less accuracy).
Whatever has the higher damage on the card is the one you should be using. Higher weapon level is usually the better one.

I've been at lvl cap for a few weeks now, what I did initially was set Mayhem 10 on Sanctuary ( can be done in the menu too but you have to reload the map if you're anywhere else) and use the Eridian using gun that shoots guns, it's alt fire mode shoots legendaries.
I think there is a hidden nerf though because actually farming Mayhem 6 weapons (6 being where a lot of the level locked rares come from) they are often better than those. Also most of what I'm using now is from leaving it at M6 or setting it to M11 (M11 = M10 without modifiers but less gear drops) and using FL4K stealth to get to Maurice's Black Market[whereismaurice.com].
Money is easy to farm, I've been doing some Trials of Instinct too trying to get a better class mod than the lvl 45 one I still have. After doing some number of these I got a Diamond key out of nowhere - not sure if from Trials or not (and some of these are FAR harder than others on the same level).
I'm not sure what class/gear people telling you to start on M6 are using but that would have been impossible for me. I went like 2 4 6, on 6 now. I still haven't even touched most of the DLC (I got Ultimate Edition for $20 in a prior sale, so have them all) - the only one I've finished is the tentacle one and it was good (and also had some good gear drops, might be worth going back to fight bosses to get higher level versions of, like the old gods shield and/or the pearl of ineffable knowledge or w/e, although that last one is from a quest, might not be repeatable).
EDIT: I also use Loaded Dice artifacts for higher luck, and after getting the first 3 unlocks from all of the Guardian trees I've been focused on Hunter for the luck boost there too. My pet can rez, I can use stealth to rez my spiderant if I need to, I keep my distance most of the time. I got a Mesmer grenade from the Diamond key and that has been awesome (makes NPCs fight each other, when they do this they also tend to cluster up making them even easier targets).
IMHO the idea of Mayhem is to give players some end game activity.
Setting Mayhem to 10 or 11 and seeing if your build can beat Wohan the Invincible with the True Trial switch engaged at the Maliwan Blacksite is a good test.
IMHO at higher Mayhem levels fewer weapons are viable so players usually farm particular weapons from places and foes that have specific gear in their loot pool so as to get a good roll where all the parts align.
Additionally farming complementary loot to buff their builds skills.
There are online guides available so players know where to farm their loot from.
edit: dammit, is it possible to sell that gun?
Another possibility is to enable Mayhem 10 and go to the Stormblind Complex. You'll only get Mayhem 10 gear while inside there but none of the Mayhem modifiers will exist. It's free Mayhem 10 gear.
