Your text sounds more like you need something, that really simulates the physics of flight. Imho you should look into x-Plane (for example), it has a great phyiscs simulation model. Downsite is: It's far from easy, to construct own planes, you have to take a deep look into it, including things like 3D Modelling with a professional software (like 3d max or at least something like blender). It's extremly time consuming and maybe expensive.
