2. Union is all you need, actually. Lots of technical fixes and plugins support. I would also recommend Script Patch (EN and RU languages only) and Classic mod (disables the addon, if you need that). Also the gamepad plugin is very useful, if you have one.

So the system pack that is already pre-installed, does it contain all the community patches that were released throughout the years? I remember we had to manually install so many patches to fix various bugs and polish the game?
And Union is like System Pack 2.0 from the same developers, with even more fixes and advanced plugins support.
Does Gothic 2 classic removes NOTR?

Yes.
It has a weird patch 2.7, but you can just install Primary Patch and then Union mod, and then it works.
Spine also works well with GOG.
