But thats learning, playing through again you of course can get vastly better early, saving more money. Heck, just praying and sacrificing health for more gold, then donating 1000 gold to the mage for boosts. wow, if i only knew that right at the start.
Only a few quests give you more XP in later chapters. But if you are too late, the quest will be failed.
So some quests you can only do in chapter 1 and 2. Some quests you can do in chapter 2 and 3 or 1, 2 and 3. And Some quests you can do until chapter 5. But if you are too late you will fail them.
Afaik a complete list for the rare chapter-depending quests is only available in german:

But only in vanilla version you get more XP for pickpocketing in later chapters of the game.
In the steam version you get more XP the more you have pickpocket no matter what chapter it is.
Damage formula for ranged attacks: Base Damage + Dexterity - Resistance
Bow skill indeed only raises the range, but, like in the case of melee, after 30% and 60% you will shoot faster as well. The only difference is that increasing accuracy beyond 100% actually increases your range, while with melee >100% crit chance has no effect at all, because at 100% every attack is a critical strike.
In the Gold Edition pickpocketing XP increase scales with how many NPCs you pickpocketed. At first it raises fast (+10 XP each time you pickpocket someone), but then it slows down.
Some quests indeed give more XP if you do them later on, but it's rather pointless really to do them later. They give more XP later only, because you will need more XP to raise level, therefore the amount given, if you do them later is rather negligible.
Edit: However time limit does exist for some quest. Canthar's Favor must be done before Chapter 3 and within some days after you acquired the quest.
