If you're playing as a mercenary/dragon hunter, you will get the quest to collect dragon eggs for the blacksmith Bennet in chapter 5, which will provide you with gold and XP for each egg that you deliver to him.
As Paladin or Mage, you can give the dragon egg that you find in the cave of the ice dragon to the mage Neoras, who will make you a potion.
Later in Irdorath, you can make the potion "Embarla Firgasto" by yourself, using ten dragon eggs, a black pearl and sulphur. Since only the dragon hunter can find additional eggs in chapter 5, he is the only character who can make this potion twice by saving up 9 eggs before going to Irdorath.
No need to be rude about it. The ice dragon is the only one I haven't defeated yet, because I wasn't sure if that would trigger chapter 5 when I left VoM.

Wow, this answered the question I was just about to ask! I didn't know how the whole dragon egg thing worked, how many were where, why people kept saying to save nine of them, etc.
