Losing close to 400 hours of grinded materials kind of hurts, but i'd love to just play the game again.. Even if it's co-op through lan.

Nope since Steam has nothing to do with the developers dedicated servers other than providing the steamworks integration.

Doubtful, work would have had to have started already and would involve capturing traffic to and from the server, without servers you'll find it extremely difficult to attempt to reverse engineer it, you would essentially be building the server from scratch and i doubt anyone with the appropriate skills cares enough to do that
