If you want to know more about the Endless universe but change setup, you can check out Endless Legend, you have surely heard about it: 4X strategy. but the entire action is on the planet Auriga.
I thought the same thing about Stellaris until I purchased it, worst mistake of my life. I find it a terrible game. One of the worst 4x I've played. I would say the Master of Orion updated remake seems more like ES2 than anything else.
As he said, Endless Legend is another 4x strategy game that is really fun (expecially with friends) and is set in the endless universe.
Said so if u are looking to a sci-fi strategy game there are a lots of different games: stellaris, age of wonders planetfall, galactic civ 3 (that is gratis on Epic Games Launcher) to bring on some titles.
If u are looking instead for a 4x game i strongly recommend playing the Civilization series that is a masterpiece for every enjoyer of the 4x strats game type.
But wait to buy it, because our beloved Amplitude Studios is going to realease a brand new game called "Humankind" that is basically an improved version of CIV. I strongly recommend this title because i had the honor to be one of the alpha tester and it was really astounding to know how mouch effort they put it in.
Totally, I recommend too to check at least Civilization 5 in this area, it's one of the pillars of 4X strategy of last decade, and the game that hooked me the most (which also has its sci-fi ideal continuation in Beyond Earth, where the action goes on a new colonized planet, and Starships, taking place into interstellar space, but do not expect anything like ES2 from these two titles, especially Starships is simple, almost mobile game).
Civilization 6 is also worth to check, still expanding its content with DLCs this year, but many prefer 5 for various reasons.
For other fantasy sci-fi 4x that is less spaceship-centric, but feels a bit like Endless Space, I'd point to Endless Legend and Age of Wonders: Planetfall (another nice fantasy-sci fi 4x game, the 4x bit is different but the combat layer is a good bit better than Endless Legend or Civ/Beyond Earth)
As for Beyond Earth+Starships they were nice at the time, but I would not buy now as the dev doesn't support them any more at all.
Cant believe no one mentioned that, its epic on a whole other level imho.
Don't let the looks put you off its not pretty.
Also not mentioned although a 4X/RTS/Tower Defence magical sandwich is AI War 2 which is also amazing.
Both of these games are realtime, but pausable and you can just slow them down to a crawl if you wish so don't let that put you off.
And both are unique enough to have a bit of a learning curve also.
It's an RTS and more focused on military, more tactical than strategic, but still has the large scale empire building elements. Much faster paced and less relaxed, but it certainly has a similar feel of building a space empire and conquering the stars.
Bit of a different genre and gameplay focus, real time vs turn based, but both the games have that similar space empire feel.
